Way back before I had four sons

I’m back!  After a long break and one son later, I’m writing again.  I haven’t made too many meals lately, so I have to go back to my archives. The hardest part about taking a break from cooking is that this is my favorite time of year to cook.  The tomatoes are ripe, sweet corn is in season, the zucchini and cucumbers are being picked and we have produce coming out of our ears.  I’m just getting back in the swing of things and hope that we don’t have to waste any more produce coming our way.

So how is life with four boys?  Crazy!  And fun! And really crazy! Thankfully, my older boys have taken to our new little bundle well.  The 2-year old is head over heels in love with his new brother.  All day he says “I like you, baby” and “I’m seeing my baby!”  Son #4 receives hugs and kisses all day long from our family.  How lucky to be a fourth child.  There are so many people to love you.

We’ve been able to get out and about and even made it to our yearly visit to the State Fair.  It was exhausting and I left thinking “thank God this only happens once a year”.  Usually we eat our way through the fair, but with four boys in tow, it’s hard to take the time to eat.  We got the must-have food, except for mini-donuts.  The boys had corn dogs, which they talked about for days before the fair.  My very favorite thing is the “all you can drink milk” for $1.00.  I’m not sure why.  Maybe it is the memory of drinking cup after cup of cold milk with my dad and my grandma as a kid.  I can’t leave the fair without it.  This year, I only drank two cups.  I have memories of getting stomach aches from too much milk (or maybe it was the three foot-long hot dogs).  In any case, the fair to me is all about reliving memories and I hope my boys feel the same way in 20 years.

So what am I cooking lately?  Anything with tomatoes.  I planted 15 tomato plants this year and then got some volunteer plants that came up.  We are picking tomatoes daily and I’ll never get tired of them.  When I have too many sitting in the kitchen, I roast tomatoes in the oven with olive oil, garlic, various herbs and salt and pepper.  I let them cool and then freeze them for later use.  The roasted tomatoes are great to add to sauces, soups and more.

    PS – congratulations on son #4. I stopped at 3 but would easily welcome another had I started earlier.
